Vegan Panckakes


Ohh my gato! These pancakes were so delicious, and so easy to make. You probably have all the ingredient in your home already.
Ingredients 
  • 1 cup of Whole Oat
  • 1 Banana 
  • 1 cup of Almond Milk
  1. First you're going to want to blend your oat till they become like powder.
  2. Then add your milk and banana blend all together. And you have your pancake batter
This makes about 10 small pancakes.

Zucchini Spaghetti

 
This dish was fast to make, it is way quicker than regular cooked spaghetti!
Before I became a vegan, cooked spaghetti would make feel all lazy when I would finish eating. It'd be the middle of the day and I would feel sluggish, I hated that feeling cause I still had things I had to do but the after affect wouldn't let me. Now that I don't eat regular noodles I can have all the spaghetti I want without feeling guilty or lazy. This would be considered a Raw Vegan Spaghetti.

Ingredients 
  • 2 Zucchini 
  • crumbled Cauliflower (optional)
  • 1 Tomato
  • 1 Red Bell Peper
  • 1 Garlic Clove
  • 2 tablespoons of soaked Dried Tomatoes
  • 1/2 tablespoon of Dried Basil
  • 1/2 tablespoon of Dried Oregano 
  • 1 Dried Tree Chili (optional)
  • 1 tablespoon of Extra Virgin Olive Oil
Tools
  • Spiral Cutter or a Peeler
  • Blender or Food Processor
  • Knife
  • Bowl 
  • Chopstick or a Fork
Steps
  1. Wash all veggies!
  2. Spiral cut your zucchini.
  3. Crush your Tree Chili (if not already crushed)
  4. Add your cut Tomato and Red Bell pepper, your Dried Tomatoes, basil, Oregano, Chili, Oil,and garlic to the blender and BLEND all together!
Now that your zucchini and sauce is done add desired amount to a bowl and add some crumbled cauliflower  on top of your pasta as "Cheese". If you want it warm just heat up only the sauce.

Servings for 2

Lentil Soup

This isn't quiet good looking, but it tastes so delicious. I grew up eating lentils especially on NewYears, it's a tradition we've been following. My grandmother says that eating lentils would help bring food the new year to come. I don't know if it is true but I still eat them because they're so good. 

What you need is:
1/2 cup of Lentils 
2 cups of Water
1 Tomato 
1/2 Onion

You're going to boil the lentils till they're soft. Stir once a while. When the water has nearly all evaporated you're going to want to add your chopped tomato and onion. Stir it till all the water evaporates. You can smooth them or leave them as is. 

You can definitely add some more ingredients. I've herd people add bacon when cooking lentils. I don't eat meat so I didn't add it. The soup is so cozy feeling, it reminds me of hot chocolate but in a soup version, if that's even possible.  lol.

Quinoa Salad

I was actually inspired by a different quinoa salad. The great thing about it is that you don't necessarily need to make this salad, you can get inspired from this one to make whole different salad. I love how this salad tasted... It was spicy but not too spicy. I could have added different vegetables but I didn't want to.
 What you'll need:
 3 stalks of Roman Lettuce
2 Carrots
5 Cherry Tomatoes
1/2 cup of Cooked Quinoa
pinch or so of Cayenne (op)
1/2 Lemmon(op)
 
When cooking your quinoa stir it with a fork, it makes it fluffier. While the quinoa is cooking you can add the cayenne so it has some spiciness to it. When the quinoa is all cooked you're going to want to let it get cool down. Once it's all cooled, pour it on your bowl with all the other ingredients, and just mix it all together. When you finished mixing it you can add the lemon so you have some spicy and sour.

Hope you like this easy salad recipe as mush I enjoyed it. Like I said, you don't have to do it exactly like I did. You can defiantly add some chicken (if you're into that) or use as a side dish. Its up too you.

Veggie Wrap

Veggie Wrap 



This is such an easy and fast meal, and it's healthy too (thumbs up)! I have recently gone vegetarian, and since I grew up make meals with some type of meat in it I had no idea what I was going to eat for the rest of my life. I thought I would end up eating nothing but salads rather it's a veggie salad or a fruit salad. Boring! I thought to myself. But theirs so many delicious plates you can make. 

Ingredients 

  1. Frescados 100% Whole Wheat Flour Tortillas 
  2. Inglehoffer Honey Mustard
  3. Romaine Lettuce
  4. Baby Bell Peppers
  5. Carrot Shreds 
Chop up all your veggies vertically. I used a peeler for the carrot shreds. Spread the honey mustard all over the tortilla and just add all the veggies in and roll the tortilla. The honey mustard will work as a sealer to help the tortilla stay in place. And enjoy! 
I hate the taste of burrito tortilla and this tortilla is no where near that taste. It tastes so much better! The wrap all together taste so good. The great thing about this is you can add other veggies with this wrap and a different spread if you would like. Hope you enjoyed this easy recipe, Thanks! (:
